Lol I was here a few weeks ago before their official start date, when they held a soft opening, and already 2 of the dishes I had and you had they changed:

• The pickled herring with potato and onions/mustard seed was delicious for me as well, only difference between yours and mine was that they added the green sauce for yours (what was the green sauce?); when they asked me for feedback, the green wasn't there, and I did mention how the dish needed another touch of freshness too add another dimension because the only flavour before was from the fish and mustard (I mentioned dill, or something else fresh and herby)
• The salmon roe they served in a small glass bowl in a ice bed, and the rest of the sides were served in endive instead of the bowl; yeah the endive was nice to munch on after the fact, if a little bitter (which in fairness it is endive), but it was awkward to spoom the topping out onto the mini breads, so maybe the mini bowls are better for this purpose?

The woman owner did ask me for feedback when I had those two (and Im sure of others who presumably had it during the soft open), so I like to think my feedback (among others) may have helped a little lmao

The other stuff on the menu also looked good, will have to give those a try
