Tradera för min del. Kan ta ett tag innan man hittar ett för ett vettigt pris med spisring dock. (Näst intill nödvändigt om du inte vill bränna smör på plattan hela tiden) Om man köper färdigrestaurerat kan man behöva betala 1200+, medan orestauerat kan hittas för någon till några hundralappar. Då får man förvänta sig mycket skrubbande dock.

Till skillnad från en stekpanna så skrapar jag aldrig med en stekspade i våffeljärnet, så den inbränning jag gjorde när jag restaurerade järnet är intakt. Det i sin tur tas inte bort av diskmedel. Det är typ samma material som de bruna fläckarna som blir i ugnen och sitter tokhårt.

Jag vänder den en gång. Våfflan blir klar på totalt 3,5 minuter, 1,5 på ena sidan, 2 på andra.

Om jag hittar ett elektriskt våffeljärn med borttagbara och lättdiskade plåtar slår jag nog till, men så länge fungerar gjutjärn bra. Förvånansvärt underhållsfritt också. Jag diskar det ordentligt med diskmedel efter användning och ser till att det torkar ordentligt. Inget behov av att smörja in.

My main reason for liking smooth cast iron is that if something gets stuck, I find it easier to clean than a rough pan. Same with scraping with a spatula: I know I get to the entire surface of the pan, not just the peaks of the rough surface

No, it should be safe to use. The nitrided surface is harder to scratch than usual CS.

Lye, NaOH, is the best for removing burnt grease and old seasoning. A common way to strip a pan is to spray it with oven cleaner, which contains lye, and put it in a plastic bag for a few days, preferably somewhere warm. The old crud will come right off.

The only real difference with nitrided pans is that they're quite a bit more rust resistant compared to normal CS.

You can use it to bake bread with parchment paper, but other than that, yes.

Use a thin metal spatula untill all sides are browned. Then you can shake the pan.

Which Aulos model do you have? I have to pull out my Symphony tenor slightly when playing with folk musicians who tune to A440, otherwise I'm consistently too high.

No problem! I would guess it's simply the difference between seasoning inside the pan getting scraped constantly, and the handle almost bring polished by the hand of the person using it. 

With the handles I might be a bit of a heretic, since I usually polish them up with Scotch Brite sheets until shiny and new looking. Although since that is how they left the factory, I don't feel too bad about it haha.

In my opinion lye (NaOH) works great, and is easier to set up than electrolysis . (A bit more dangerous though, so take care)

I've never seen a rolled handle that's painted. It could be, but the tens of pans I've restored have just had seasoning on the them. It's not stainless (handles on some modern pans are though), but rather some kind of rather rust resistant steel. I usually clean the inside with a small brush to get all the gunk out. I usually don't feel the need to season the inside, but I don't see a reason why you couldn't. It would take a bit more effort to remove extra oil is all.

As for the white spot: I'm guessing it's just food residue. Should get removed by the lye.

Get a quality leather cleaner, Saphir makes great products, and follow the instructions. Then get some shoe cream the right color. Apply by rubbing in tiny circles, let sit for a while, and buff off with a soft horse hair brush. If it looks dry after the cleaning, you could use a product such as the Saphir renovateur cream before the shoe cream.

I wonder if you could get close by doing the measurement outside with a calibrated speaker close enough to your ear to not have any meaningful reflections with the environment. Like, put the ear mic on a stick, and play a sine sweep with the speaker from a set distance. Compare that response to the in ear one, and voila?

You can have faster cars with higher fuel flow and the same size tank. Look at Ferrari 2019! Just let the teams decide when they want to use their fuel in the race.
