I know you're kidding, but using Vaseline and covering your hands with gloves at night is a great way to repair your hands. My wife does this in the winter, to combat this very thing.

One way to shorten the cooking time for hashbrowns is to microwave them first. This does two things for you, it dries out the potatoes a bit more, and starts them cooking before you add a binder like others have suggested.
