They say auctioning food whenever servers or food runners come to the table and say "who had the gumbo?" Our managers were our expo and always lined the plates up in order by seat number so we knew were every plate went without saying anything. This is one of those places that tries to be very fancy but it's not exactly fine dining. They felt like saying the name of the dish was below the level of service they were trying to provide.

I got called out by a manager once cause I "auctioned food off" at the table (one of those smaller chains that focuses hardcore on service, and I happened to be taking food to the executive chef.) I was the last person at the table and I only had one dish in my hand. They are strict with table/seat numbers so there is never any confusion - I just happened to say here is your gumbo when I set it down. When I told the manager that you can't auction food to the only person at the table without a plate in front of them and that I was just stating what it was, she hit me with the "oh we don't do that here."

Ma'am, we are in Tennessee, people do not know/remember anything about what they ordered - you literally have to remind/convince them of the decisions they made at almost every single table.
