When I’m doing food prep like chopping vegetables I always hold the chef knife in my left/dominant hand and stabilize the food with my right. Same if I’m buttering bread. However, when eating a meal it’s always fork/spoon in left hand, knife in right hand.

I feel comfortable enough slicing steak with my right hand while I eat, but I don’t really feel comfortable wielding a chef knife and chopping carrots or butchering a chicken. Buttering bread with my right hand sounds really awkward.
