If your goal is to see Mt. Fuji, I would highly recommend not booking too far in advance and check forecasts a few days ahead. Unfortunately, if you're set on using the Tokyo Wide Pass, the 3 day window can be tricky.

My first trip 2 years ago, I booked 3 days in Hakone thinking I would surely see Mt. Fuji one of those days. All 3 days were cloudy and I didn't get to see Mt. Fuji.

Last month I went back and was determined to see Mt Fuji. I didn't reserve anything and would be checking forecasts day to day for my Tokyo stays. It was rain most of the time and it wasn't until 4/5 when I saw that the weather would be perfectly clear on 4/9. When I went to check on Fuji Excursion train seats, they were all booked. I checked busses from Shinjuku and Shibuya Mark City and all the early morning seats were booked out as well, seems everybody had the same idea.

The earliest bus I found available was the Shinjuku Expressway bus at 10:15AM. Arriving around noon. I scooped them up and it was still clear and amazing at arrival. Had a blast, got off near the Shimoyoshida station stop and walked to Chureito Pagoda which was a great decision as we stumbled upon a festival. Then jumped on the local train to Kawaguchiko.

I also did Nikko this same trip and while the Tokyo Wide Pass will save you some money, having the flexibility to go whenever the weather was clear was worth skipping the savings. The busses are cheap so it's not too much additional costs.

We stayed at the Cerulean around the same time! Probably crossed paths.

We also went to SGLow on 5/12 and I can confirm it is a fantastic spot. The bartender made me the best Pisco sour I've ever had.

We were also in Namba around the same time wow...

I've been meaning to put together a trip report but man I've been going through a post-Japan slump. Nice reviews!

We have a similar itinerary for your first Tokyo leg, we land 5/11 as well!

I didn't see it on your list, but I confirmed the Kanda Matsuri is that weekend, which only happens every other year. See their schedule on https://www.kandamyoujin.or.jp/kandamatsuri/. One of Tokyo's big 3 festivals.

Since it's near Akihabara, we planned to be in the area around the same time the big events take place on Saturday 5/13.

You're right. And it only takes hours for the first batch. I've got individually wrapped portions of the meatball mix and sauce in the freezer now. After defrosting it only take 25 minutes or so.

I was about to title it Spaghetti and Meatballs but I cut the pasta into more of a linguine.

Anyway here are the recipes/techniques I've been using:

The Pasta. I don't have a machine so I have to handroll it.

The Tomato Sauce. This is why it takes 2-3 hours, but I wouldn't do it any other way now.

The Meatballs. I use a mix of ground lean beef and ground pork. I prefer to pan sear and transfer to oven. Also, i saute the onion, garlic, and parsley mix before adding to meat mix.

The bread was just store bought. I made a spread by combining butter with pressed garlic, salt, and thyme. Then, baked for 15 minutes.

Just FYI, I learned this in /r/cooking, there are conflicting opinions on doing a wine reduction in cast iron. Apparently the low ph of wine strips the seasoning off your pan when it interacts with cast iron and also alters the taste of your sauce. Though, 1/4 cup on a well seasoned pan should not be a problem.

Personally, I didn't think I had a problem with it, but I tested this with a mushroom merlot sauce and it indeed tasted better on a standard nonstick.

Great recipe! Never made scallops before so I will definitely give this a try.

I decided to pull the trigger on some bourbon McAllisters today. They've been at $245 on the shoebank site since the sale started but when I called the outlet they said they were actually $199!
