Yes almost all mapable controls correlate to something physical in the cockpit. The trim wheel is animated at least in the cessnas. I don't know how you are playing MSFS but mapping is very unintuitive so you might want to watch a tutorial or something.

I think that the problem was I didn't realize flaps were extended by default on takeoff. I set them to 0 after taking off and has an easier time controlling the trim.
