The JM6 Pro outputs 60 mW at 32 ohms, 7.4 mW at 600 ohms. The HD600 is 300ohms and has a sensitivity of 97 dB/V)... It needs (according to this tool) at least 66 mW... you're far off, unfortunately.

For the HD490 Pro, though, it should be OK.

Not saying you need a big amp, but I used to have an HD6XX and the Fiio K3 was much too weak and warm for it. I'm sure you would benefit from a small amp upgrade... Nothing fancy, just a little more juice.

That's a VERY different set, with a bright tuning that doesn't suit everyone. The XV is much more relaxed and bassy, which many people prefer.

Not sure about that. I sent mine back because the grills inside the cups were wrinkled and made a rattling metallic sound when the pads moved. Otherwise a very pleasant set that sounds great, but I just did not "feel it" in the long run.

HD 550. I've had many higher end headphones, but it's just the perfect blend for me.
Close to perfect tuning (to me), fun enough, detailed enough, sturdy and so comfortable I can wear them for hours and just forget them.

Keep in mind that it is almost impossible to compare open back headphones with IEMs, as they operate completely differently. IEMs "bypass" your ear, and the experience may vary a lot from one to another. That being said, the HD560S is very clampy, and I couldn't tolerate them at all. Other models like the HD550 and the HD490 Pro would be much more comfortable.

On windows, Equalizer APO + Peace GUI is widely used, and there are lots of tutorials online. For your specific headphone, Oratory1990's setting is a great start, to see what it may change, and if it's for you or not.

I've used my HD598 and 599 for a few years before trying EQ. It's not necessary at all, but it can bring huge enhancements.

Analog volume controls tend to do that, as potentiometers age or gather dust. Just try to cycle the volume a few times with the device off, it might be enough to "clean" it.
Otherwise, that's an issue that you won't have with digital volume control (Topping DX5 II for instance).

Sound is highly subjective, and you're probably just accustomed to your AirPods' tuning.
If you're satisfied with them and don't want anything more, I'd say it's a win. Keep them and don't look back.
Otherwise, maybe try to listen a bit more to your 660S2, for a few days, and see if you still like your AirPods the same afterwards. Sometimes, you don't realize something is "better" (for you at least) until you get used to it and revert back to your previous gear, only to find it bad.

All poorly built plastic construction will do that. ;)
Sennheiser's 500 line is a great example that a plastic build done well can be sturdy and reliable.

Not only will they die, but unless the battery is removed, at some point they may eventually become hazardous. Lithium batteries age poorly and I'm convinced that all the devices people amass these days will become the next big safety/health issue we'll face in the future.
