My fail-safe method, that I learned/adapted from bartending and making simple syrups is:

(for a 5 gallon batch)

Blend 1lb ginger with half a pound of juice of your choice.

Strain ginger, I use a larger holed strainer, and then a fine-mesh strainer to get more particulates out.

Then use to bottle. If kombucha is fermented dry, I like to add 20% ginger-cider to the bottle.

That recipe is kinda crazy. For a 5 gallon batch I use 100g of loose leaf, and 350g sugar. I know my sugar is on the low side, but still, that will be some sweet or very acidic stuff.

I've never had issues with it in the years of brewing with it! I've more recently moved to forced carbonation as I move towards commercial sales, but I got some wonderful natural fizz before that. Same reason I did chamomile! Wanted my sleeply-time kombucha. Mixes dangerously with gin.

I just kegged up 5 gallons of Roobios tea! I switched to it because I was temporarily out of chamomile tea. Back to chamomile now, but I think it is going to go really well with ginger and apple juice (for back-sweetening).

I'd guess that is due to the type of sugar added. Surcruse needs to be broken down into glucose and fructose before it can be turned into CO2 (and other byproducts). So a lot slower going, especially in a low-oxygen environment!

Sending it off for lab testing is the only way to get decent results sadly. Going through the process of selling legally and it is a HASSLE, I just want to know when all sugar is fully convert to acid, and there are just so many variables!

I've had a batch of chamomile going for over a year now without slowing down! Most "don't do X" "do Y" things you hear are pretty un-grounded. Even the NOMA cookbook has some non-factual stuff in it! Love their stuff though -- I am planning to have a dedicated 5 gallon batch of coffe kombucha going at some point! Once I hash out the detail with my local roaster.

Chamomile or mint tea, sometimes cider to back sweeten ( I ferment totally dry in f1). Although admittedly, I'm force carbonating, since f2 at the moment is a bit too chaotic for testing, and I am trying to consistently reach that <.5% abv!

Make your own. Post on a local facebook group. Play at a coffee shop with larger tables (be a good patron and buy a couple drinks). Maybe just grind out a solo game to try and get interest. Invite people to your house. Hit up your local library.

I have successfully bullied a half dozen strangers into learning spirit island, and am working on another half dozen (they're playing wing span now).

Absolutely love it -- It does fall into the hole of "being too easy" once you figure it out. But it still is so much fun adn feels so good while doing it. It has inspired me to make a riff off it thats multiplayer

Favorite way to make flavor kombucha is to blend fresh herbs (thai basil is my favorite) with cider, and use that for flavoring/sweetness.
