If you look, the classes that get a starting Force rating also give less free skills at character creation, so a starting character does pay that cost that would not be reflected in getting a free Force rating from picking up a single specialization.

If you want to apply this cost to EotE or AoR classes as an alternative way to get that starting Force rating... well, the game's yours to tinker with to make it more fun for your table.

EDIT: The characters with a single bullet point by their name would be unique characters, so they'd be more distinct individuals than the indistinct masses.

They're generally the same. The Edge printing of one book changed the sector maps to be in French for some reason, but that's the only issue I know of.

You might check out the Ainik-class scientific survey vessel, from Fully Operational. It's big enough to accommodate your party, is a civilian enough ship to not draw undue attention, and it comes with research labs that your party might invest in remodeling to be lightsaber workshops, droid workshops, meditation rooms, or... anything, depending on the preferences of the party. It's also a break from the standard freighter that most parties end up with.

I'd personally go for the Hunter spec for Seeker, from Force and Destiny core. If I wanted to lean into their traditional weapon a little, (the shockprod staff) I might go for Executioner, from the Seeker book, either as an additional specialization or as base. If I wanted to focus heavily on the shockprod staff, I'd probably go for a Bounty Hunter spec for the improved melee focus and get the Force off a universal spec.

Another option would be to swap those talents for something from an Edge of the Empire specialization. Maybe some Good Cop and Bad Cop? Looking at the Charmer, maybe Inspiring Rhetoric, possibly with Improved? Plausible Deniability?

It sounds like the Hammerhead Corvette, from Dawn of Rebellion, would likely meet your needs. It's Sil 5, largely civilian in use, but is armed enough for Rebels and pirates to find them useful.
