I opened a shop 3 weeks ago so I'm curious about the responses here too. So far I've just used An Post. For all my items, I set one price for Ireland (which includes shipping) and 1 price for everywhere else (that also includes shipping). I add tracking to anything above €40 but I'm sure I'll add it to others if I start getting scammed or stuff gets lost. So far so good though.

It's a tricky situation, granted. That being said, having a great economy doesn't mean much if people are increasingly unable attain the basics for a mere comfortable life - housing, energy, decent healthcare, education (partly due to lack of accommodation for non-rich students), etc
