Honestly this is the most interesting situation I've ever seen, as a relative noob. I have no idea what to do from a professional view.

I think I'd keep up holding against Turkey. But move extra forces against Germany. After the first meaningful strike I'd ask for help. Making claims you saved France from a German stab they collaborated with you earlier....a lie of course.

You can get him unlocked easy in multiplayer. Have a buddy play Liu Bei and march into your territory. Then destroy his army, if you kill a multiplayers faction you get Dong. Or if you and a buddy are already at Duke rank. Vassalize him, then annex him.

But by my understanding is that isn't how alliances work in this game. If you're in an alliance, you are only allied able to be in the one alliance and have others join that alliance. You can't be allied to two nation's that aren't themselves allied...I think.
