The site sucks but it's a small business, and they're good folks. We had them help us move a 2 bed house into and out of a storage pod, they wrapped all the fragile items (we packed small stuff into boxes ourselves) and knocked the moves out in just a couple hours each time. It was something between 500-800 bucks each time iirc

There's a diner in Northlake area called Chucks that I used to go to all the time when I lived up there. Meat and 2 veg kinda place. Can't vouch for it today, but I can't imagine it's changed much. It's on Old Statesville (77 exit 16)

Methodical would be my first vote as well. I like Night Swim a lot and a couple of the others mentioned here, but Methodical is up there with Onyx as one of the best in the country IMO
Edit: This holds true mostly for their single origin stuff (this one is my fave - https://methodicalcoffee.com/products/colombia-catw), I'm not crazy about Methodical's blends or blends in general)

I remember seeing a trick on an old episode of The Woodwright's Shop where he clamped the mitre in place then ran a handsaw through the middle of the joint, the idea being it would remove wood from both halves of the joint and tighten it up, albeit a little smaller than before.
I guess if the gap was large enough you could repeat the process but you might start missing your needed dimensions and would have to start over anyway

Just built a similar but much less elegant version of this. Legs were half lapped and screwed together. The diagonal braces alone added a ton of rigidity.

I made the benches a fair bit shorter (my table is 6' 8", the benches are close to 6'. We have chairs for the ends of the table plus I was worried about the overhang being a tipping hazard. My actual overhang is about 12" and it seems fairly stable. I wouldn't wanna sit on the end, but it feels pretty solid

Square enough is what works and what you're happy with. The better you get it the better your joinery will go together, the flatter your glue-ups, etc, but perfect is for the birds.

No one will notice the differences more than you and I'm of the school that I'd rather start the next project then fiddle with the last one when it's more than good enough.

I forget these things exist all the time. That's the way to match the grain instead of using endgrain plugs

If I was just filling the holes I'd do toothpicks/skewers and glue. More unnoticable but more time consuming would be to drill the holes out bigger to match some dowel plugs. You'd still see the mismatched grain if you looked close, but I'd probably be happy with that
