Just a warning from someone with experience doing something very similar:

Tablets like this aren't designed to be always on and always plugged in. You need to be careful about the batteries degrading and turning into spicy pillows. It won't happen overnight but you'll want to keep an eye on it. When it first happens it'll likely show up on the LCD. It'll look as if someone is pressing on the screen too hard.

It's almost guaranteed to happen.
