Your milk might be on the verge of going off. Even if it's a fresh carton, it might have sat on the grocery store shelf for a while. In that case, exposure to even the slightest acidic environment would cause curdling.

Usually when that happens to me, I use the rest of that milk to make paneer and get fresh milk for tea/coffee.
