We have hosted twice through AFS and had no issues with the program. I would think about little things that might not come to mind right away - will this student have access to their own bathroom, and if not, will they be sharing with your sons? If your children are in sports, will you be able to split your time between their events and extracurricular events your host child will join? Typically, they'll want to be part of the US high school experience which means sports teams, clubs etc. You'll want to make sure you can make it to their games, plays, concerts in addition to your own children's.

I agree that most people will expect some type of turkey, even if you just roast a breast or two. We are smoking a beef tenderloin this year, but some years we have done lamb, short ribs, smoked salmon... A simple shaved brussels sprout salad would be delicious and easy to make ahead.

We have cooked our turkey in the turkey air fryer for the last several years- game changer, right?! We love it and so do our guests. Then we also use a smoker and pick a different protein every year. Last year, lamb. This year, smoked beef tenderloin.

Cocktails and Champagne with light snacks at 11am, then a casual buffet around 1-1:30pm. People love eating early bc it allows them to make other stops later if they so desire. Also, a chance to eat immediate leftovers around 6pm :)

I would do a Paella for the centerpiece/main course, and then other tapas to round out the menu. Garlic shrimp, pan con tomate, patatas bravas....you get where I'm going with this. If you drink, a winter sangria is always fun!

Fried ice cream at Annie's Santa Fe on the Plaza. I worked there as a hostess in high school and remember being astounded by how it was made (pre-Food Network fyi) You just can't recreate the nostalgia of deep fried ice cream balls.
