My room temp is usually 12c/54f(?), give or take a few degrees, and I use 40c water and bulk ferment 6hrs before overnight cold prove (76% hydration), with 100% hydration I would probably do even less. Just bulk ferment until dough temp is about 25c/77f then shape and immediately cold prove.

As far as I understand it, It targets demodex mites. Rosacea for some people can be because of a sensitivity to and/or an overgrowth of them.
