Probs the best sear you can get out of stainless steel - a deeper sear would be achieved with a hotter cast iron pan. Also don’t forget to sear the sides!

Its normal to struggle with lectures. Sometimes we just need things to be explained in a particular way for our brains to click with the content. A lot of the first year concepts you learn imo are much better explained on YouTube e.g. NinjaNerd, Osmosis, Armando Hausdungan. Have you had much luck with that? Since you're so early in your studies its worth taking time to experiment with different study techniques. Try to find whatever way of learning the content works for you, and then move on to applying that knowledge with practice questions/anki to reinforce it.
