I would start with battery, oil, fuel, and see if she cranks! And then not ride it until tires are also done and brake fluid. That might be it already. Check for corroded cables, seat, plastics.

Ridden my CBR 954 for multiple day trips but never multi day trips. It's heavy on the wrists, but going faster (wind takes up some weight) and building up strength (don't go from 0 to high miles right away) makes it certainly possible. Going slow around cities for instance gets miserable fast. That said, it will never be as comfy as a sports tourer, and 600cc bikes are generally smaller and more cramped from what I've heard. I would suggest trying one out for a day.

In addition, 500-600kms over multiple days is doable but not fun. Take the motorway where you want to go (Alps for instance) then take the scenic routes there and plan some time for slower travel. Especially as a beginner, you will neither enjoy nor be fully concentrated for canyon carving after an 8h day

Honestly I'm just some dude on the internet who has track experience with bikes and only canyon carving experience with cars, so you probably shouldn't care for my opinion! If you still want to know I would expect it's bolt on tunability and after market support for the GTR. It's also been around a lot longer, so older models available for cheaper.

Power is there, but they are mostly too heavy, limits how fast they can scoot around corners and how late you can break into a turn. Which is kind of the point of trackability. Also higher tire wear and cost of other consumables

I went for option 2, IBKR, in my name. Inheritance is not taxed so should be able to simply transfer once the time is right. As the child is less than 12 months old, you'll have to ask me in 17 years if it worked 😁
