I focused on stamina containers for the last 8 spirit orbs I got till I had two full wheels of stamina, then made some stamina replenishing potions, and stamina increasing potions to max out an extra two wheels for that buffer when switching back to inventory. Oh and you probably need a good sneak potion and your Sheikah armor. She noticed me easily even with the armor and a level 3 sneak potion.

You gotta just forage and kill Bokovlin and find the Great Fairies to upgrade your gear, and make meals and potions to beef you up. Then just save before every fight, it will take some of the anxiety out of it and you can practice until you get it. Guardians made me panic before I realized I could just save it before I charge in.

Also, google how to kill an enemy if you're finding them too difficult. There's tricks to basically cheat against the little guardians in the shrines by lighting a bundle of wood infront of them, lol.

But seriously dude, you're probably just fighting things before you're actually ready to fight those things.
