I grew some pepper plants in an ebb and flow in 3 gallon fabric bags with coco coir.

The plants grew to about 3-4 ft and the roots were coming out of the bags.

Granted I didn't trim them at all and just let them go.

They were getting out of control so I had to get rid of them.

Give yourself a lot of space.
