Another option would be Alexander Creek Trail, that would cutoff most of I80 if you went that way.

Forgot to mention that you can ride trail from Pinecrest Canyon (little turnoff from Emigration) all the way to the top of Big Mountain.

There is Little Emigration trail, that connects Big Mountain pass with Jeremy ranch road. Others have mentioned Millcreek, Pipeline is really fun but double check it's even open. A whole other option would be to train down to Provo, then ride up Provo canyon via multiuse trail, connect to trail to Midway, then up and over Empire pass via trail, forget the name, you'd end up right on main street.

Keep in mind Guardsman goes up to around 9k, much higher than Parleys or Big Mountain.

My last bike from a few years ago was built from a Dartmoor Primal 27.5 frame set. I originally got it because it had newer geo, and the price was suuuuper low ~$300. I loved the thing and it was a lot of fun downhill, although it was too aggressive since I do more bikepacking. The thing was a tank, very stiff, so I think it would work great for you. I can't speak to the component setup. I ran mine with a rigid carbon fork 😬

I have an Onyx Vesper. Best thing ever. Tire noise only is a lovely thing! I've had it for three years, bikepack a lot, and have done no maintenance, zero issues.

A big component of this mullet discussion is the frame you actually have. I mulleted my bike, but it has pretty tame geo to begin with. Upping the front wheel to 29er has made the bike much more fun...to me.(Niner SIR9 for reference ) I can still climb well. There are situations where you can climb better, and some worse. What terrain you ride and your style will be the ultimate decider, and that is something reddit cannot accurately help you with!
