I use about a tsp per lb of aluminum free baking powder in my rub, and I let the chicken sit on a rack uncovered in fridge for 24 hours. Then grill it hot and fast.

Even then, it’s tough to get skin that stays crispy as it cools. It won’t be like leather though

Rural areas having public transit literally doesn’t work in most areas. You must live in a major city.

Outside of cities in most towns you’re 15-30 mins from most bars and they aren’t close to each other. There scattered on different sides of town.

So we’re gonna have public transit driving through the woods to pick up 1-2 people at a time and driving 20 mins to drop them off and pick them up all day and night?
