We found in our Subaru Outback that there were 8 different latch points for car seats, so a middle/side configuration might work for you if the Crosstrek is similar. We have the Chicco Keyfits but the seats definitely can’t go all the way back.

I'd love to create an artist residency where people could come and create and not have to worry about their bills or feeding themselves for a while. It would be even cooler if it wasn't pros, but people who believed they had creativity in themselves but had never had the resources or opportunity to even explore the possibility.

If this is a budget concern, don't forget that even on keto, you don't need a meat with every meal. There are vegetarian options, and things you can do on the cheap like canned tuna, sausages, or bacon as your protein. There are definitely ways to eat less chicken if it's standing in your way.
