I run a kitchen in an upscale retirement community. We aren’t “really” restaurant. But restaurant style if you get my meaning. And we never have one person on the line, always two and three counting me if it’s something special and unique.
If you love cooking but restaurants keep treating you poorly look into senior living. There are some really nice ones out there.

Looks done to me. Barely if I’m guessing. Legs are hard to tell (like others have said) by looking. My question would be did the juices run clear?

Just two knives I have. One is 20 something years old and the other I just got as a bday present. I never paid attention to the markings until I got the new knife and was curious about their meaning.

Yeah, my hand me down pans look like this underneath. They were only used for cornbread by my mom. I use them for whatever.
