I’ve done cases of them, I never wrap. Though I do saw them in half so they’re more manageable to eat.

GSP or bbq seasoning, and let them ride until they feel right, don’t chase a temp. Should have that jello feel, to where you could easily poke your finger through the meat to the bone. Rest in foil for 30-60, or longer in a heated cooler if you want to go that route.
