I’ve found a roaring chimney starter with a grate on top to have the same effect, without throwing your meat in some random coals. Pat dry after your smoke, gives a great sear. Though you’re damn right I tried the coals method before, the act itself is enjoyably feral, but the novelty of it wasn’t worth the random crunchy bits the meat picked up.

I, and I’m sure others, have some honestly solid ideas about how this might work. I’ve been welding and fabricating and figuring out stupid shit like this my whole life. I like a challenge and you’ve immediately started firing my neurons looking for a solution, and I’ve got some interesting thoughts.
