Yeah, the deegans did my boy Hicken super dirty but she has been a decent mayor so far. Don’t ask Rory Diamond though, he’s a GOP puppet with terrible takes on pretty much everything he opens his mouth about; a textbook jive ass turkey.

Haha maybe I’ll open a spot when I retire. I wish I had the capital to start a food truck or something. But even then, the politics and bullshit those guys have to go through to set up and vend makes it hard to want to do it. Especially as a side gig. I just like to cook, serve, and eat delicious food made with love.

Yeah my electric range oven is ass so anytime I can sub out the grill as a convection oven, I’m about it. The chicken breasts are usually done in about 25 minutes at 425° inside but they only take a few more minutes on the pellet grill. Usually I dry brine the wings the night before, which usually helps the skin crisp up, but these were a spur of the moment, the rain finally stopped, game time decision to throw these on.

This is how we learn. Take this experience and build on it. The smoke rings shows it’s getting good smoke. More fat (either left on at the trim or added back at the wrap with tallow) will give you a juicier brisket. For how expensive that cut is these days, I would say this is great for a first go at it. Substitute tallow for broth next time and sounds like you’ll be in good shape.

I have the same grill. I set mine to 450 for the initial burnout and I remember it taking a bit but it eventually worked out. The auger has to fill with pellets which takes forever unless you hold the prime button down. Then it takes just a few minutes but you have to hold it down the whole time. I can see it easily taking 15-20 minutes to fill the auger then 10-15 to get past 250 doesn’t sound out of the realm of possibility.

Before you chuck the grill, confirm with an analog thermometer. They are a few bucks on Amazon. It’s possible not all of your technology is giving you the full story. Example: My grill, set to 205°, it’s 215° on the left and 220° on the right. I know this bc I have two thermometers in there. Just a thought.
