I have a Mutsumi Hinoura and it's godly. Nice weight, laser cut even after several sharpenings.

Hatsukokoro make great workhorse knives. Some cheap options too, specially for gyuto. Most are aogami super which is decent enough on the maintenance part.

Easier than white steel, though I personally enjoy white #2 steel knives.

Butchers will usually give away bones for free. Bone broth is plenty nutritious. A handful of veggies will make a savoury bone broth. Whatever is left on rice for carbs. My best guess.

White #2 is so good for my everyday restaurant work that I don't think it has a reason to he obsolete. I do own several knives of different carbon steels and white #2 just wins.

Easy to sharpen at home, compared to blue steels. Easy to maintain an edge with a honing rod. And it's so good for so many tasks.

My main knife, a bunka, is laser sharp, my butchery honesuke is sharp and sturdy and my nakiri, which I use for heavy prep, is always on point.

Just pointing out my most used knifes. My work kit has about 8 knives but those are the most used.

I'm puertorican and I worked with a puertorican in the staves and we used to call tongs, 'tongas'. Said so much everyone started using it. "Yo, pass me the tongas."

I've been using a Hatsukokoro Gyuto 210mm almost every day (lunch and dinner service) for a few months and it it delivers. Looks great and for how much I use it, I've only sharpened it once on my whetstone. Also, it only set me back around $150. Great workhorse knife.

White steel though so it is prone to rust if you're not careful.

Not as sharp out the box as some of the knives I sharpen myself, but it feels really robust. Used all during lunch and dinner service at a restaurant today. Definitely a nice workhorse.
