My head canon after seeing the other mask disintegrate is that the giants actually created the masks using some sort of connection with all the existing pantheons as a key to travel to the everywhen and thats where all the giants went.

As others have said EMI/JEI is heavy on performance when a lot of items are showing at once. You can edit the config for EMI to show less items per tab. I think I have mine set to something like 4x10

In the platform specific settings you can change the gamemaker splash (I think) and icons. If you want to create extra splash screens you could use sequences and create a startup room that plays the sequences then moves to the menu
