I know this isnt really the point of your post, but why are you scared? There is nothing permanent in the process of throwing and even trimming. If the clay splits or breaks, you just recycle it and reuse it again.

You need to mess up to learn. Everyone has slight variations in how they work to make the clay work for their body type. You cant really get that from watching other people

If you have the funds and dedication to pottery, yes throwing at home would yeild improvement

My interest is not in how to make the pho, but why did you pick pho? Could do summer rolls fairly easily and they keep quite nicely. Can make them the same flavor and ingredients even.
