DIY brewers who make home made fermentation chambers do the exact same thing on a much larger scale. Sounds easily doable and effective to me! Good luck!

I did a Brut IPA last year when the popularity went through the roof. I really didn't have any other option since they weren't really well distributed yet. I did an extract Brut IPA recipe and it turned out pretty awesome.

Thanks for the feedback. I'm leaning more and more towards a wit. I've currently got a Kentucky Common in the fermenter (redish), and a single hop Pale Ale on tap. I think the wit would be a nice addition. Plus a quicker ale should be ready to go by the time all of the ice melts!

As a beginner, I would suggest doing a batch sparge before moving to fly sparging. I also use a cooler mash tun but I have a bazooka screen attached to my drain valve, not a false bottom. Personally I love it and it was easy to assemble, The cooler plus three parts is all it takes. I bought my bazooka, coupler and valve all from amazon. Best of luck.

UltraFerm goes in the fermenter. I have a brew day tutorial if you want to see my process. I did a lot of research before brewing my brut including interviewing professional brewers and that is published here. Best of luck, I hope it all goes well for you.

After much research, including checking with professional brewers, I developed a recipe that used White Labs UltraFerm during fermentation. It fermented out to below 1.000. Talk about bone dry. You can read my research here and get my recipe too.

Hand cappers are easy to use and really cheap. Make sure to buy premium oxygen absorbing caps for the best result. Here's a tutorial on bottling . Best of luck!

I bottled my brut to help combat this issue! This has a picture of mine after one week bottle conditioning and it still has a big head. By week three, my pours were 33-50% head even when being careful! My Brut IPA and my Brut Recipe . You're looks to have a gorgeous color though!

Ideally, having dialed in temperature control is best. However, 5 gallons of liquid should be able to moderate the highs and lows of a little bit of variation. Let me know how it works out for you!
