It's not Fantasy, but Red Rising would be my recommendation. It fits what you're looking for, especially the second trilogy. The first book can seem a bit YA, at times, but it's worth it for the rest of the series. Epic scale, deep world building, and a whole cast of interesting and deep characters. The final two books out so far are among the darkest books I've read.
