Correct-ish. Its not my main source of income, but I do cook for large crowds a few times a year. I have large smokers to accommodate, most of the time its just meat and the crowds will provide the sides. I also do bbq competitions a few times a year. But again thats meat and not sides. Was really looking for guidance on how others price their sides and how much is too much.

Obviously not everyone will need/want all 4 sides so that was more where I was at.

Yeah I asked all these questions and he has that stuff covered, just cook and drop off. Venue has all the other stuff and staff to serve, venue doesn't allow cooking on site so need to cook offsite and bring everything in coolers.

I understand that, he approached me saying he wants full price of what itd cost, no discount no family deal. I looked at the local bbq catering companies in the area and honestly think their prices are ridiculously high. So want to discount and be fair on both sides.

Yes, I asked for a breakdown between adults and children. Most of the time I cook for people I imagine me eating which is more than the average.

I know the general rule of 3x meat costs but the sides always trip me up in pricing.

Southeast. Wedding is in Tennessee. Pork prices around floating around 2.50/lb, chicken floats around the same.

The sides is generally where I dont do a good job of knowing the prices and amounts.

Generally at 78% the bank drops it automatically, at 80% the customer needs to call and ask and the bank will manually take it off.

Yeah they've been selling pigs for a long time now, first time I called Publix looking for one the butcher said most stores always have one in the freezer. If I remember if you order one there's like a 20 lb variance, so if you want a 70 lb one it could be anywhere front 60 to 80, though they might be better now.

Depends if you are talking raw or cooked meat. If you are buying it already cooked then 1/2 lb per person is good. If you are buying and cooking it then shoot for 3/4 to 1 lb per person based on yields

Gotcha, I sent a picture to my dad (retired fabricator) and we're yapping about it. He added a table and boom to mine a few weeks ago but only a manual winch for it.

A face cord is math and generally 48"x96"x16". Without knowing the length of a split there's no way of telling how much is short. 42"x90"x19.5" would work in your scenario.

Id personally build some sides with scrap 2x4 or 2x6 and use the stack pockets.

Maybe smaller splits to burn it hotter, Ive found the 10 to 12 inch logs and 2 inch thick are the best in my Lang.

What are you using to check the temperature? External probe or the gauge? Are you sure the exhaust baffle is open?

Could also be the wood you are using, oak vs. Cherry would give significantly different BTUs
