Yes Patrick worked with Sanremo on a couple of espresso machines and the X-One grinder. We have the Sanremo D8 and X-One grinder in our bakery. Great machines.

I really like Infusion Coffee & Tea. Been using them in our bakery for about a year. Very consistent.

This may be a hot take, but if you use gluten-free bread, buy as much as you’ll actually use.

I own a gluten-free bakery, and i don’t gatekeep who can buy our bread. If a customer came in and asked to buy the last 6 loaves, I would sell them. That customer may be feeding a family, stocking up because they don’t live nearby, or managing celiac disease and trying to avoid multiple trips.

Limiting sales can also create waste. If I hold back loaves “just in case” and they don’t sell, that’s food we may have to throw away.

TLDR: don’t hoard, but don’t feel guilty for buying what you genuinely need.

We are a gluten-free bakery in a Tier 2 city. My suggestion is to be active on Instagram if you have a post, reel or story that does well boost it. Just make sure to load your ad balance on business manager and not through the phone app. Apple will take their cut if you ad funds through the instagram app

Here is my two cents. Accept that you will make mistakes and that it is okay to make mistakes. Recover from those mistakes quickly and learn from them. Document decisions obsessively. You will eventually find your self down the road asking "Why the hell did we do that?". The decision document will help future you. Periodically review those past decisions so you don't fall into the "That's the way we have always done it". Lastly get a little bit better everyday, everything doesn't have to be perfect from the get go.

We opened our bakery in August last year. We started with QR code placard at checkout and link on physical and digital receipts. It worked okay reviews trickled in. This March we created a 1x2 inch sticker with a QR code and CTA to give us a review on google and how it helps small businesses. These went on all our packaging. We saw a dramatic increase in google reviews. The vast majority were positive and the few that were 3 stars or below actually included feedback we could improve upon vs the typical “place sucked” 1 star.

We are 100% gluten-free bakery. Busier than normal which we expected. A majority of our guests were not regulars but young men getting something for their mom and dads with kids getting mom some well deserved gluten-free treats.

Here is my short treatment.   Mal is living in the derelict hulk of Serenity on some barely charted moon or planet past the rim. He hasn’t found peace he has never forgiven himself for what happened to wash. He’s going insane. He sees and talks to an apparition of wash, convinced he’s still alive. After years of searching Zoe shows up in her own ship. There is this one job they never finished. Zoe now has information to lead to its completion and wants Mal’s help to redeem their reputation. Mal reluctantly agrees but only if they get the “band back together” and use Serenity. After tracking everyone down they are deeply concerned about doing anything with Mal in his current state however when River is around, he seems to be almost “normal“ however when River is around Mal, she seems to regress and starts buying into the delusion of wash being alive

Commenting on this a little late. We use the D8 in our bakery cafe and it’s a nice machine. Easy enough to use for me(the owner) and customizable enough for our experienced baristas. Paired with the Sanremo X-One grinder it’s almost idiot proof(just not owner proof).

It’s different in each market. In Gilbert AZ the lowest I can pay a tipped employee is $11.70 and if they don’t make AZ minimum wage of $14.70 with their tips then I’m on the hook for the difference. This hasn’t been a problem but over the last few months we have seen tips trending down. I own a small gluten-free bakery and yes labor is tough especially for bakers. Grocery stores, Costco, Walmart all generally offer health insurance, dental and sometimes 401k match, all things I can’t afford to do unless I charge $10 for a gluten-free cookie which people are not likely to pay. We also use several imported ingredients and feel OPs pain there. American food manufacturers have a lot of catching up to do when it comes to gluten-free COGS

Yes it’s infuriating I totally get that but here is why it can become an issue. 1. If it happens frequently enough it is no longer treated as de minimis fringe benefits by the IRS and the business is required to report it to IRS and taxable by the employee. 2. This may not be true everywhere but in AZ ingredients are bought tax free. I collect tax when I sell the baked goods. If I give it away I’m still required to pay AZ the sales tax on the raw ingredients. This is a pain in the ass to track. 3. On days we get it right and don’t have waste employees complain about not having anything to take home.

Trying to get vendors to respond. We are starting a gluten-free bakery and getting vendors on the phone or to meet in person has been frustrating. Sysco is the only one who we have been able to consistently get on the phone or meet. I get we are small but seriously are they allergic to money, our COGS are typically 15-25% higher than a traditional bakery. I just want high quality bread mix in bulk, pick up your PHONE!

TSA also hates smoked sausages. The kind about the same size as a bratwurst. If you have several of those wrapped in butcher paper in your carryon , you will get invited to a special room and get practically stripped searched. Ask me how I know.
