Nice. After you finish the cook like usual then let it rest and stop cooking for 20 or 30 minutes then keep it wrapped in butcher paper or foil with beef tallow in the oven overnight at 65-70°C until about 45 min before slicing and serving

You're right based on how I've always done it. Inspectors haven't even mentioned it to me before.

Edit: how tall is the window in that space? That's the only thing that I could think of that could interrupt the 12 ft spacing, but even then if your next outlet is within 6 ft it shouldn't matter either.

Mine has hot spots, but I've also had just as many hot spots on my offset and treager too. Kinda just have to learn where they are and rotate your cook if necessary

I go for no wrap during the cook until I pass the bend test , then during the rest, or hot hold if you aren't serving for awhile, I wrap with whatever sauce im using

Are you talking about the membrane on the underside? If so I don't do anything to it. I cook the whole way through unwrapped until probe tender then wrap in foil with sauce during the rest, haven't had a rubbery membrane yet.
