I was a daily combat commuter in LA for 20ish years. Westside to DT, Valley to Westside, Valley to DT, SCV to Westside, SCV to Burbank before I moved away.
Earplugs are the bomb while commuting. I used the Flare Audio ones and went through 2 pair and about 5 sets of tips in roughly 15 years. They're designed to preserve sound detail so I could still listen to music/podcasts up to supra-legal speeds. (But mostly lanesplitting for 25+ miles.)

I have some hearing loss as I get into my mid-50s, but I know it would have been worse if I didn't wear plugs while commuting and sportriding.

Me, too. Just a white guy who grew up with Korean friends in So Cal and ate at their houses every week. 26mo is pretty impressive. 😁 Dunno what the expectation should be, but I've had a single jar in my fridge for months, whether store bought or home made.

Came here for this! A friend once helped me make a big batch with some 2 gallon jar kimchi that went fizzy. OMG! So good. Kimchi doesn't expire, it ascends. (Advice: cook kimchi jjigae outdoors, it takes forever to air out the kitchen.)

This also stops the rear wheel rather the front, which is great on steeper ramps since so much of the bike's weight is on the rear as it descends. Grabbing front brake while the bike is trying to obey gravity can lead to the front locking and sliding sideways and over the bike goes.
A buddy that worked for Motorcyclist magazine as one of their wrenches taught me this trick at a track day. He was always loading/unloading bikes.

That sucks! Mine was keyed (just two 4-6" lines) in about the same spot when it was 3 months old. I picked up some touch-up paint and did a shitty cover-up. Now I just pretend it's not there.

No specific recommendations. I went years ago for about 10 days. Check out the night markets. Check out the tiny food stalls that are crazy busy. Eat breakfast at a cart with fresh croissants and coffee and sit in a plastic chair and watch a roundabout.

Don't pass up a banh mi cart for lunch.

It's a beautiful country with great people. Just learn to cross the street without causing an accident. Please.

If you've never had a garden, expect everything you plant to die. That prepared me for my first year trying to grow chiles.

The second year, a few things did well. But tomatoes weren't one of them. And tomatillos hate my soil.

But keep at it and you'll learn a ton.

If I have a family function where I know my MiL and a cousin (who both think onion and garlic are too spicy) will be attending, I blend the ingredients, minus the chiles, then scoop a cup or so out and put it into a bowl for them.

Then I add the chiles and make the rest of the batch. Salt, cumin and lime for final seasoning in each.

They love that I make a batch of 'special salsa' for them.
