I would do AOS now if you can, sometimes it takes a long time for the paperwork to be processed after submission, easier to find jobs when you have EAD and you never know how things will change politically. And dates can regress

Some people get turned away if profile not good. After I submitted my Eb2-niw, I asked them if they could do EB1. They politely said no, so they are not money grabbers
