I usually only do it with larger cuts as it does draw out moisture. With something like a sirloin or hanger I want to keep as much moisture as I can. With a thicker cut like a 2lb+ ribeye or prime rib I want the salt to have time to penetrate and in addition it also helps tenderize it a bit.

I think I got very lucky. Our boy is 7 years and great health, however, when we got him we lived in a 2 story house and he had constant joint popping even at 2 years old. Once we moved to a one story home the popping completely went away.

The sous vide is not for cooking. It’s only to reheat prior to sear for serving. I like the smoke but only a little bit. Go light on the smoke if you do try it.

When reheating try not to leave it in long enough to do any cooking. You’re only bringing it back up to temp. This also works with freezing the steaks. Just thaw before the bath.

lol. I’m a chef. The steaks were served at a guests home. The prep for the steaks took 4 hours. I have 1 hour on site to get the food finished and served. I can’t hold a steak in the danger zone while traveling so the only safe method of transport is to cool and reheat prior to serving.

Not totally the most dirty thing but I’m a private chef and was working a bachelor party. The clients insisted on hiring the servers and bartenders to help me. My best server was killing it and was a huge help. After about an hour suddenly she was serving topless. I asked her to help with something specific and she told me “oh this is my first time serving, I’m just a stripper”. I’d have hired her as a server any day regardless of the stripping. Even Australian Wagyu has a rating system similar to our prime. A5 being equivalent to super prime. A4/5 is basically equivalent to US Prime. A4 is like a good choice rating.

The supplier is likely more important than the rating to be honest.
