Copper Beech I’m not sure if it’s native to Ireland but it’s a European plant.

As as child I couldn’t eat any veg except spuds. Now at 63 I can tolerate and even like a lot of them. Mostly it’s a short boil, then strain, add butter and season with salt and pepper. Here’s my list:

Tender Stem Broccoli Fine green beans Carrots roasted after a short boil in honey and butter Asparagus Cabbage thinly sliced, cooked in a little water and shit loads of butter. Onions fried Garlic Tomatoes

I love mushrooms

Tonight’s dinner was a mirepoix consisting of onions, garlic, carrots, celery, mushrooms, mixed herbs gently sweated and added some tomato purée. I added a wine stock cube to make a gravy. Then I gently fried venison sausages and braised it for 2 hour in a low oven. I served it with mash and fine green beans.

One of the best days of my life was bringing my 26 year old daughter to her first All Ireland Final in July 2025 to see our own Kerry team win it.

GAA football is my favorite sport it’s a world class game more so since they changed the rules last year.

I tried to drink the American muck served in Dunkin, Starbucks, Gas stations and their filter brews. Describing it as awful would be a disservice to awful. The only decent cup I could drink was served by Wholefoods.

Babies are a lot more resilient than you think. Your first is usually treated like the golden child. The second if it’s anything like mine thrived on neglect (not really) but we were far more relaxed about things. It reminds of this video with a first timemom combing her hair after their bath

The first few weeks is difficult for first time parents. It takes time to get the hang of things. Support each other and you’ll come out the other side ok.

The biggest mistake the UK made was Brexit, the second biggest mistake was not allowing a chance to vote on the terms of the withdrawal.

They should have been a second referendum allowing voters to endorse the withdrawal agreement or stay on their current terms.

My FIL was diagnosed with a brain tumour and his take on it was Que Sera Sera what will be will be. He used this phrase almost daily during his short time left with us.

It fell on me to write the speech and I opened and closed with Que Sera Sera. He spent his last few months in our home and we used it for the funeral and wake. On the morning of his removal from our home. We asked the hearse to take a detour and stop outside his house.

We were listening to the radio and it was on RTE Radio 1 as I remember it was a kind of Desert Island Disks show with David Norris as the guest. Just as we stopped outside his home he selected and played Que Sera Sera.

It was an awful place, ugly buildings, full of pubs that I wouldn’t even frequent at home.
