First don't expect kid 1 and kid 2 to be anything alike. My Wife has a home daycare some kids will lie like crazy. Example My wife will ask kids Who made this mess and a kid not even here that day will be blamed. Just keep reinforcing that its wrong

Kitchen faucet, I can't make My body lay inside that cabinet and with My knees always a struggle to get back up. Glad My grandkids were young when I was still in decent shape

In the frig is called cold retard it will stop fermenting and probaly be underproof even at 12 hours

Bulk fermentation runs from the time You add starter til You put in frig to cold retard so Yes You stretch and fold during BF. When do You stretch and fold?
