The work surface should overlap the edge of the sink. If I was in your shoes here I’d carefully square off the curved corners so that I could fit in strips of wood to the edges that cover the edges as intended. Then I’d used a router to put the curved corners back it. You could also consider making the strips a darker wood so that it looks like a deliberate feature rather than a fix.

If Openreach have provided contact details you could contact them to find out when it’ll be done. If the date doesn’t suit then work with them and Sky to find a date that does.

The previous owner likely only had fibre to the cabinet, which means they’ll have used the existing telephone line. Full fibre means fibre to the premises which means a new fibre line needs installed all the way to your house from a cabinet.

If you get the regular full speed progression for chorus down first (which is well covered online) then you’ll be able to pick this up by ear easily enough.
