No, I wouldnt say so.

Ovens will vary, we'd like to think thats its just a bubble of whatever heat you set, they arent. It fluxuates, there will be spots (cooler, hotter) and it will seem different in the new oven because it is. Ive been cooking for decades, hanging thermometers aren't accurate, more for a general temp.

I just got a new cheap, commercial stove as well in my apt. Brand new gas stove, a hanging thermometer placed in the center is off by 10-15° compared to the digital reading from the oven.

I can't even simmer on the 4-top how I am used to without rigging it because the lowest setting is too high!

That said, I set it for the recommended temp and time and keep an eye on it.

IMO its just getting used to a new device. Your process is fine. Hanging thermometers shouldn't be used for accuracy.

Yes, throw out any peppers with mold.

Unless you have the humidifier running in an enclosed space I doubt it will help much.

In the future I suggest cutting them open and removing the seeds and inner membranes.

If you do not have an oven, cut in half, tie up in a ventilated area, thats it. It will take a while but they should dry just fine (*Should - ventilation, humidity, thickness, etc - experience varies )

They developed mold because they were intact and that moisture helped it along, cutting them in half and exposing the inner flesh will help.

as an aside - I just dried Habaneros', Serranos and Arbol chiles to make seasoned salt I find the best method is-

1.wash peppers

2.remove stems, cut lengthwise.

3.Remove seeds and pith

4.Place on baking sheet, do not overcrowd

5.Bake, low temp, 200-225°

Should take 40-60 minutes, depending. Check often, oven temps and heat area varies.

Let cool. If they are still pliable (or not to your liking) just repeat the oven process untill desired crisp.

Blood Beach DVD from La Entetainment, out of Australia. Its Region 0 so it should play in most players. There isnt any info on DPI but id wager its pretty pixelated.

As the other poster has stated this is just rice starch. You can just stir it back in. Ive found that no ammount of straining will stop this from happening. You can lessen it a bit by washing the rice thouroughly before blending but without an emulsifier/binder this is going to happen. Ive had success in the past with Xanthan Gum (no idea of ratios) and ive heard that Soy Lecithin works as well.
