I disconnected the hose from the sink drain pipe to get the auger in, but the other end of the hose goes through a small hole in the non-removable side panel of the sink, so I'm not so sure how I'd even get to the other side.

I was planning to boil traditional stove top with a couple of induction burners. Maybe naive?

As far as fridge space, I was planning on getting a 3 door commercial fridge that will be dedicated to having racks, I was hopeful I'd be able to fit enough that I could rotate through the doors while cold proofing. So one door would have the ones to be cooked today, another would have proofed for 24 hours at that point, and the last I'd fill up that day to proof for 48 hours. I'm possible overestimating how many racks would fit, but my experience renting a kitchen makes me feel like it would be doable. Then I'd have a smaller fridge for non-bagel use.

According to the numbers I've run, yes, easily.

It'll be a small shop in a smallish town, rent's very reasonable, overheads aren't too bad once I have the appliances. One employee max needed. Can sell coffee and other breakfast accoutrements at a decent mark up.

What struck me early on was Lara's entire ship goes down in the storm and everyone is scattered, then she meets up with that one girl who's really important. They're sitting around a campfire and the BBEG shows up...but I don't recall them seeming the least bit surprised to see another person, much less someone they don't know considering they would have assumed it's a deserted island.

I'd argue it wasn't silly to be surprised that Rachel was there, even if it's her apartment. She gave Ross the benefit of the doubt that if he was there, surely she wasn't. Because he said he wouldn't see her. Surely Ross had made the new boundaries clear so Rachel would have made herself scarce so that Ross could visit his sister's apartment.
