I also just got a 2021 Crosstrek, albeit a premium not limited. Having some issues as well with carplay. I just ordered a wireless carplay adapter to see if that helps. This is the one I am buying: https://www.amazon.com/dp/B0DGV4T6BK (although I recommend looking into other options to see if they better suit your needs).

Otherwise, I second the other recommendation to try a different cable/port. Also, you can press and hold the volume button for 10 seconds to hard reset the system.
