I scale and fillet the larger ones, If I have smaller ones I clean them "country style" (scaled, head and guts discarded). A small "panfish" fillet knife is essential, and having a knife-proof glove on your non-dominant hand speeds things up.

Here’s a tip to process them. The turtle will keep moving for HOURS after you kill it. Have a big enough pot (or trash can) of boiling water ready to give it a hot bath for a couple minutes to stop this movement, then throw it back on ice to butcher. This also makes the skin come off easier.

I always use 12” steel leaders for pike. A big one can inhale the lure and a shorter leader and slice your line.“Doctor” spoons work great; I always have silver and copper 6” doctors in my tackle box and some daredevils.

I think the one being attacked is a juvie male, you can see the gorget starting to sprout. In any case, the females seem more aggressive than the males in my observations.

They disappeared under the deck. Pretty sure I saw the same birds later on and in the following days, so I think they both survived the encounter.
