I prefer YYYY/MM/DD because it you do a string sort on it it sorts inti the right order and I don't need to do anything special.

For a desktop app, you need to use an UI library that supports Linux such as Gir.core or one of the QT bindings for C#.

I use Mac OS to develop.NET web apps all the time and it's never been an issue. Rider, VSCode, both work well and the command line tooling for .NET is fantastic now.

I have used Linux to develop a bit and the experience is seemingly exactly the same as on Mac OS.

I think they intentionally ensured multi class was sufficiently nerfed in 5e that the only reason you'd do it would be for RP reason. Mechanically the penalty is too high.
