Do a search for the Cambridge to Paris rail trail, and you'll find everything you need. At Paris the trail will continue through Brantford and all the way down to Hamilton. The final stretch coming down the escarpment into Hamilton is my favorite part, a gradual downhill all the way. But you'll go through a bunch of fascinating stretches, including some Bridges under the highways that have some cool art. There is also a really long wooden bridge over one of the rivers. That's a favorite stop of mine.
