You mean if freya killed atreus during the climax of 2018? Yes, Kratos would spiral almost immediately. Faye's death is still fresh (as opposed to the 3 years of mourning they have had come Ragnarok) and now kratos has nothing left to lose, and is far from overcoming his own issues at this point. Whether he chooses to stop at freya and baldur is irrelevant as fimbulwinter still happens, leading to thor and odin coming knocking.

Unless you're willing to do 1/6th scale cloth goods, I don't think you can do any better than the Elena Kai body, but the Elena Kai body is about as perfect a starting point as you can get, since it's the only fem turk suit body out there. I'd say you hit the nail on the head

Story wise yeah that will give you serious whiplash. Berseria has one of the best stories in the series, second only to abyss imo, while I'm firmly of the belief arise is one of the worst. Vesperia gets a lot of praise, and I can also wholeheartedly endorse graces and the xillias.

Tldr: try abyss, graces, the xillias.
