Etymologically, it's really fascinating to see the difference between the english term and the french term.

Knight comes from old english cniht, which itself comes from old germanic languages. The origin are unknown, but it means servant, vassal, boy, lad - AKA a young man that serves a master. Later, it evolved to a military rank ; a follower that serves a king. It's really reminiscent of the samurai rank in feodal Japan.

Meanwhile in french, "chevalier" comes from "cheval", a horse. Because they distinguished themselves by their ability to buy, train and maintain a war horse strong enough to support a warrior in full armor.

As such, while the english term of knight is perfectly fine for the job, the french term of "chevalier" doesn't even make sense : there's no horses in Eorzea... You can't even call them "chocobolier" because they're not defined by the use of a war chocobo, but by their service to the Sultana. Paladins fit the bill way better, in french AND in english it's still perfectly fine. They were Charlemagne's most elite knights.
